Yirgacheffe has become famous for coffees that taste like blueberry. Dense vegetation is a period of warm tropical climate with moderate wet and dry
seasons. Most of the coffee is grown in the shade by small producers who use organic practices. The coffees are grown from 1600 to 2400 m.l.s.m. in
these highlands.
Working process
Natural coffees are typically delivered on the day they are harvested and are first selected for ripeness and quality before being rinsed of dirt. Then they are laid out on raised drying beds or tables, where they will be constantly rotated throughout the drying process. Drying can take an average of 8-25 days, depending on the weather.
